Using Chocolate in Mexican Desserts

Chocolate is a Mexican staple and the Aztecs used it both as currency and food. They used to combine it with seeds, honey, spices and nuts to make delicious drinks which were enjoyed by noblemen and used in rituals by Aztec priests. Chocolate can be traced even further back, to the Mayan times.

The Spanish explorers took chocolate to Spain with them and it became the official drink of the king. Around the turn of the nineteenth century, hot chocolate was made with sugar and milk in Europe and this mixture evolved into the hot chocolate we know and love today.

Before then, hot chocolate was rather a bitter flavored drink rather than a sweet one. A lot of porcelain manufacturers at the time began making special ranges cups and pots just for hot chocolate because of its popularity.

Mexican Chocolate Drinks

Chocolate is used in Mexican dessert recipes but it is also used to make a variety of drinks. Since Mexican chocolate drinks are so thick and sweet, they can count as desserts too.

A wooden whisk known as a molinillo is often used to froth Mexican hot chocolate drinks such as champurrado and atole. A cold chocolate drink called tejate is a specialty in the Oaxaca region and this drink is a frothy combination of cocoa flowers, dark chocolate and corn masa.

Mole is a savory Mexican sauce which contains nuts, chili, tomato, chocolate, spices and garlic. Only a small amount of dark, bitter chocolate is used to make mole and this sauce is served with chicken or turkey. Chocolate mousse, chocolate flan and chocolate souffle are other examples of Mexican desserts featuring chocolate as an ingredient.

Recipe for Mexican Chocolate Soup

This tasty and unusual dessert recipe is known as "sopa de chocolate" in Mexico and it clearly reflects the French influence on Mexican cuisine. A lot of Mexican recipes have French, Portuguese, Indian, Spanish or Caribbean touches and Mexican food is a combination of many cuisines. This Mexican dessert recipe serves four people.

What you will need:


2 oz grated Mexican chocolate
1/2 teaspoon vanilla extract
2 cups milk
4 eggs
1 1/4 cups sugar
1 1/2 tablespoons slivered almonds

How to make it:

Preheat the oven to 350 degrees F. Cook 1/4 cup of the sugar with the milk gently in a pan over a low flame. Separate the eggs and beat the egg yolks with 1/4 cup of sugar. Pour the egg yolk mixture into the milk and keep cooking it, stirring all the time, until the mixture is thick. Do not let it boil.

Stir in the chocolate until the mixture is smooth. Let it cool down and divide it between four serving dishes. Beat the egg whites and sugar until you get stiff peaks, then divide this mixture between four custard cups. Put these in a pan with an inch of water in it and bake until the meringues are cooked and golden brown.

Add a meringue to each of the serving dishes and sprinkle the almonds over the top. A dollop of vanilla ice cream would also be a good garnish for these Mexican desserts.

Easy Chocolate Cake Recipes

I love chocolate

I love chocolate and so does the rest of my family. It doesn't matter what form it's in either, I'll eat it in chocolate chip cookies or death by chocolate dessert or even just by the bar. It's so nice to go out to eat because you get to try a different chocolate dessert almost every time but it's a shame you can't do that every day, or can you?

You can't go out to eat every day, or at least not many of us can, and satisfying your desire for chocolate in different forms is probably difficult. I only know two recipes and neither of them are very exiting. It's either chocolate brownies out of a packet or chocolate ice cream out of a tub. Don't you wish that you could eat the same things at home that you would if you went out to a swanky restaurant?

Are you stopping yourself doing just that because you think that eating chocolate desserts every day would give you serious weight problems? I know that I do, there must be oodles of calories in those desserts and there probably is in the ones you get in restaurants.

Amish Cake Recipe - Chocolate Chip Sheet Cake

I was born and raised in Indiana where there are still many old order Amish in the area. In fact my father hired the Amish to build our family home and my sister-in-law sells Amish furniture in her store. I came to love and respect them and especially their cooking. They sure can produce some good meals on those old fashion wood burning stoves! Here is a cake recipe that I got from the late Mrs. Coblentz who was an excellent Amish cook; so good, in fact, she wrote a syndicated column about her life sharing recipes from her kitchen. Chocolate Chip Cake is a sheet cake topped with chocolate chips and nuts.

CHOCOLATE CHIP CAKE

1 3/4 cups sifted flour
2 tbsps cocoa
1 tsp baking soda
1 tsp salt
1 cup shortening
1 cup boiling water
1 tsp vanilla
1 cup sugar
2 eggs, beaten
6-oz chocolate chips
1/2 cup chopped hickory nuts (or pecans)

Preheat oven to 350 degrees. Grease a 9 x 13 x2-inch baking pan; set aside.

Sift together flour, cocoa, salt and baking soda. In a large bowl, cream together the shortening and sugar. Add the eggs and vanilla to the sugar mixture and beat thoroughly. Add the flour mixture and the water alternately mixing batter and beating smooth after each addition. Spoon into the prepared pan and spread batter evenly. Sprinkle the chocolate chips and the nuts over the top of the batter. Bake at 350 degrees for 45 minutes or until a wooden toothpick inserted in the center comes out clean.

NOTE: There is no need to frost this cake; it is delicious as it is. You can, however, use your favorite frosting if desired. It is also good with a dollop of whipped cream on top.

How to Make a Chocolate Strawberry Layer Cake

Chocolate and strawberries! What could be better? There is just something about the two together that really can satisfy the human taste buds! The next time you are looking to try a new cake recipe, give this Chocolate Strawberry Layer Cake a try. Make it even better by dipping the strawberries about half-way up the side in melted chocolate and adding a whole dipped strawberry in the center. If that is too much of a chocolate look for you, dip the berries in white chocolate. Beautiful and yummy! This is a great cake for birthdays and other special occasions as well as an everyday dessert.

CHOCOLATE STRAWBERRY LAYER CAKE
2 eggs
1 1/3 cups sugar
1 1/4 cups all-purpose flour
1/4 cup unsweetened cocoa powder
1 1/2 tsp baking soda
1/4 tsp salt
2/3 cup vegetable oil
1 cup buttermilk
1 tsp vanilla extract
1/2 cup strawberry preserves
1 pint fresh strawberries, hulled, halved

Preheat oven to 350 degrees. Grease and lightly flour two 9-inch cake pans; set aside. Beat eggs and sugar in a small mixing bowl until thick and light colored. In a large bowl, sift the flour, cocoa powder, baking soda, and salt together. Add the vegetable oil, buttermilk, and vanilla extract to the flour mixture; mix until blended. Fold in the eggs and sugar mixture. Pour batter evenly into the two prepared pans. Bake at 350 degrees for 30 minutes. Cool in the pans on wire racks for about 10 minutes. Remove the cakes to the wire racks and cool completely. Place one layer on a serving plate. Spread the top of that layer with the strawberry preserves; cover preserves with the second layer. Prepare frosting and frost top of cake. Garnish with the strawberries by placing berries in a circle, cut side down, around the top edge of the cake.

FROSTING:

1 cup whipping cream
1/3 cup unsweetened cocoa powder
1/2 cup confectioners' sugar
1 tsp vanilla extract

Beat the whipping cream with the cocoa powder, confectioners' sugar, and vanilla extract. Spread the frosting over the top of the cake; cover loosely and refrigerate until serving time. Garnish with the strawberries, as directed above, just before serving. Enjoy!

Google Breadcrumbs Explained

Search engine giant Google has recently introduced a new update to its search engine results pages (SERPs) that's causing quite a stir, affectionately called "Google breadcrumbs!"

What are Google Breadcrumbs?
Breadcrumb navigation is often used on websites to help visitors know where they are in the overall site structure. For example, a single page on a recipe site might the navigation showing "Homepage > Baking Recipes > Chocolate Cake" to show that the visitor is on a page for a chocolate cake recipe, within the baking category.

The different parts of the breadcrumb navigation are often clickable, allowing the visitor to quickly visit the different areas of the site. In the above example, clicking "Baking Recipes" would take the visitor to a category page displaying all the baking recipes.

The breadcrumbs are the arrows (>) between the sections.

Why Are They Called Breadcrumbs?
The name comes from the concept that this kind of navigation shows the visitor's "trail" through the site.

Leaving a trail of breadcrumbs is a reference to the classic Brothers Grimm fairytale Hansel and Gretel.

How To Spot The New Navigation on Google Search Results
The new breadcrumb navigation can be spotted on the last line of each search result (where it is included) in small green text. This is the line that normally displays the URL of the page that the search result links to.

The breadcrumb navigation can be identified by the presence of breadcrumb arrows (>) in the green text. Instead of just displaying the URL, Google now displays the breadcrumb navigation in this format: Homepage > Category > Page

Each of these words (in the above case "homepage," "category" and "page") link to their respective parts of the site. The main link in the listing will still click through in the same way as before.

So now instead of just one link, Google includes three or more links to different parts of a website.

Why Is This Good For Website Owners?
Listings that include the breadcrumb navigation benefit site owners by increasing the number of opportunities for searchers to click. These additional links give greater choice to the searcher and eases their navigation through the site they click to.

Ease of navigation creates a positive experience and when visitors have a positive experience on a website, their trust in the website owner increases. This is particularly important for e-commerce websites, where breadcrumb navigation is also particularly useful.

Additionally, a shopper may search for a particular product name and be shown breadcrumb navigation that allows them to view the product's category, which shows other similar products. One of these products might be more suitable for the shopper, causing them to buy when they wouldn't have if they had just landed on the original product page.

How To Get Google To Include Breadcrumbs In Your Listings
You might wonder where Google gets its data for the breadcrumb navigation on its search engine results pages. It's just a case of it recognizing standard breadcrumb navigation on your website.

Standard breadcrumb navigation is in this format:
Homepage > Category Page > Individual Page

You can add additional categories (or "steps") if required.

Weight Loss Diet Simplified For Results

Most weight loss diets are unsustainable and only offer short term results. A perfect example of this would be the original Atkins diet. It needed the users to stick to a weight loss meal plan that mainly consisted of fatty red meats. It also included little to know carbs at all, which was incredibly unhealthy, especially if living an active lifestyle. So when we do look to lose weight we need to think of a diet as a lifestyle change, instead of a quick fix.

Lifestyle

So in this lifestyle change we need to also look at burning more calories through increased exercise. This should really be active functional training (Exercise that improves our daily living) like simply going for a walk / jog, taking classes or going to the gym and cross training (mixed weight and cardio session). But if this isn't possible or you don't like the idea of training then just look at trying to increase your activity levels throughout each day e.g. walking, dancing, swimming etc.

Now let's get down to the main reason your reading this article... the weight loss basics that will shed the pounds and keep them off!

Diet simplified

When looking at eating to lose weight we just need to establish first what it is that puts on the majority of everyone's weight, Carbohydrates. It isn't actually fat like most people assume. Fat is important to our development and living especially if you choose to train with weights to help your weight loss. This obviously doesn't mean fat is your friend, just keep it to a minimum.

Carbohydrates:

Carbohydrates are the main issue with the modern day eating habit; you need to learn the two different types and when to eat them. Carbohydrates can be split into two groups Complex and simple carbs.

· Complex carbohydrates: Foods that provide your body with a steady slow release of energy. Can be found in food like bread, rice, pasta, potato.

· Simple carbohydrates: Food that releases a quick source of energy like fruit, vegetables, salad.

The key to using carbohydrates in weight loss is eating the right types at the right time. Below is a list of complex carbs you should eat. You will probably notice that bread and pasta is not there. As a rule don't eat any carbohydrates that we have added things to (White rice) or created (Bread, pasta). So go all natural!

· Brown rice

· Oats

· Wholegrain products

· Sweet potato

Simple carbohydrates can be eaten all the time, but again only if naturally produced like fruit, vegetables and salad. This eliminates things like chocolates, sweets and condiments. Listed below are some of the simple carbs (apologies for not listing exactly).

* Enhance your weight loss: Eating simple carbs that are the colour green you will actually help alkali your body making it more efficient and thus creating a fat burning machine. If you would like to know more look to the "Alkali Diet".

· Root vegetables (Apart from white vegetable like potato or parsnip).

· Corn

· Chickpeas

· Fruit (Be aware Avocados have an extremely high fat content)

· Barley

· Beans

· Salad

Protein:

Protein is used to build and repair your body, so if you're training ensure you eat enough protein for that athletic physique. As well as protein aiding your recovery, it also helps those hunger pangs without adding excess fat (as long as its lean protein). Protein comes in many different forms; just make sure that you eat a variation and that the cuts of meat are lean. The list below can be eaten whenever you want so should make up the majority of your diet.

· Turkey breast

· Lean chicken breast

· Eggs (Mainly whites)

· Fish

· Cottage cheese

· Soya products

· Vegetable protein foods such as Quorn or veggie mince. (vegetarian products)

Other proteins such source like red meat (lamb, steak etc.) and pork tend to be very fatty unless you buy expensive cuts. For this reason try and make sure that you have a minimal amount; around once per week and that you trim the fat off before cooking.

Important rules for losing weight

* Eat 4 - 5 small meals, evenly spread throughout the day.
* Stick to carbohydrates straight from nature's back yard.
* Only eat meat if you can see where it's come from. E.g. Can you obviously see what the cut of meat is and if it used to fly, swim or run? Don't eat processed meat.
* Choose a high in fibre breakfast - porridge, Weetabix, Branflakes (this will hold your hunger for longer, providing you with a slow release of energy)
* Snack healthy: Eat beans, nuts, fruit and seeds. These have vital fats, vitamins, minerals and proteins used for recovery and sustaining health.
* Plan and cook your meals the night before and if you do get stuck think simple e.g. low fat cottage cheese on Ryvita or rice cake. Look through our recipes for help.
* Have one treat per week, TO KEEP YOU SANE. Probably one of the most important points, too many people try to cut too much out too fast and this is why they fail. Enjoy your food!
* Reduce alcohol intake.
* Replace fizzy drinks with fruit juice, cordial, water. You should be drinking 3 - 4 litres of fluids a day.
* Swap whole milk for semi-skimmed, or semi-skimmed to skimmed.
* Stop taking sugar in tea and coffee.
* Supplementing your diet with health products: This can be done as a healthy option and woman should especially look at what supplements they are taking due to their hormone balance. * Myth: eating before bed is bad

Weight loss steps in order of effectiveness

· Reduce alcohol intake

· Stop drinking full fat milk

· Eat 5 small meals a day

· Drink more water

This is by far the slowest way to remove excessive fat, but is by far the easiest. The steady changes to your diet shouldn't make a huge impact on you but will make you start to lose weight due to the reduced calories and get you on the way to living a healthy lifestyle.

Go Back in Time, Forget About Calories and Diets, and Enjoy This Hurricane Milky Way Cake!

I remember this recipe from the 1960s. It may have been around before then, but I would have been a little young to remember that--yeah, right! For your next special occasion go back to the time when we didn't drive ourselves crazy counting calories, worrying about cholesterol, etc. and just enjoy a nostalgic slice of a really good Hurricane Milky Way Cake! Just don't indulge too often, okay? I don't want to be responsible for leading down the wrong path with your diet!

HURRICANE MILKY WAY CAKE

8 Milky Way candy bars (not the large size)
3 sticks butter or margarine
4 1/2 cups sugar
4 eggs, beaten
2 1/2 cups all-purpose flour
1/2 tsp baking soda
1 1/4 cup buttermilk
1 cup chopped pecans
1 small can evaporated milk
1 6-oz pkg chocolate chips
1 cup marshmallow creme

In a saucepan combine the candy bars and 1 stick of the butter or margarine. Cook over low heat, stirring constantly, until melted. Set aside.

Cream two cups sugar and 1 stick of the butter or margarine in a bowl; beat in the eggs, one at a time. Sift the flour and the baking soda together; add to the sugar mixture alternately with the buttermilk. Stir in the candy mixture. Add the pecans and mix in well. Pour into a greased and floured oblong baking pan. Bake at 325 degrees for 1 hour and 10 minutes.

Combine the remaining butter, sugar, and the evaporated milk in a saucepan and cook to the soft-ball stage, stirring frequently. Remove from the heat and add the chocolate chips and marshmallow creme. Cool slightly. Beat until thick and spread over the cake.
